Rosso Colli Toscana Centrale IGT

Around the mid-1980s Bernardo Gondi began experimenting with Cabernet; he then decided to buy barriques and to try his hand at a few blends. After several attempts, in 1989 he concluded that the finest choice for the first Super Tuscan of Tenuta Bossi was a single-varietal Cabernet Sauvignon. Given the wine's power and structure, he chose a name that would evoke the family's warrior origins.

Harvest and climate

The grapes are picked in early October.

Fermentation and vinification

Fermentation takes place in vats, with the temperature controlled by a refrigeration unit.

Ageing

It rests for 12 months in 20 hl Slavonian oak casks, 12 months in barriques and 24 months in bottle.

Tasting notes

Appearance: Dense, compact ruby red with garnet reflections. Nose: Refined and complex, with notes of wild berry preserve threaded with light boisé sensations. The bouquet broadens into recollections of carob, rhubarb, coffee, leather and chocolate. Palate: Balanced and full of personality; what strikes most is the gustatory intensity, which stays vividly present throughout the sensory journey. The tannins are silky and well knit, and the persistence is remarkably long, calling back the balsamic and spicy register.

Pairing

Braised and stewed meats of various kinds, and small game, feathered game included.

Production area

The Villa Bossi estate, at an altitude of around 300 metres above sea level, in the dedicated Sottomonte vineyard: 2.7 hectares of Cabernet Sauvignon with a southern exposure, set on the hillside.
