Bernardo Gondi has always been fascinated by spirits; indeed, in the nineteenth century Tenuta Bossi produced one of the finest Italian cognacs. Since Italian legislation on distilling is a complicated matter, we entrusted Bonollo with the task of producing a spirit from our own pomace.

Harvest and climate

Fermentation and vinification

Grappa is the spirit obtained by direct distillation of the pomace (the skins and berries left after separation from the wholly or partly fermented must), which is fed into the still. Distillation is essentially the physico-chemical process by which heat vaporises the volatile components, water and alcohol among them, separates them, and recovers them in liquid form through the recondensation brought about by lowering the temperature.

Tasting notes

Appearance: Clear and colourless. Nose: Great freshness and elegance, with floral notes of violet and red fruits. It closes on a light herbaceous touch. Palate: Supple and round, with a juniper and fruit-driven finish.

Pairing

A contemplative spirit, at home with chocolates and marrons glacés.
