At Tenuta Bossi vin santo has always been made, just as tradition demands. Since the 1950s it has been produced from Trebbiano alone.

Harvest and climate

The grapes are picked in late September, early October.

Fermentation and vinification

Ageing

It rests for 9 years in caratelli of 50-200 litre capacity in a loft beneath the roof.

Tasting notes

Appearance: Deep amber, with tawny highlights. Nose: Great aromatic intensity with remarkable complexity and breadth of perfume. Mellow notes of walnut, dried fig, caramel, candied fruit, dried white fruit (apricot), date and chestnut honey close on sweet spice and a faintly ethereal finish. Palate: Sweet, supple and round, at once elegant and powerful. The gustatory balance is compelling: over a structure carried entirely by an elegant alcoholic note, a supporting freshness emerges. The finish is extremely long, echoing all the notes found on the nose.

Serving temperature and glass

Pairing

Chocolate desserts, cream-based ice creams and dry almond-paste biscuits, but also foie gras or blue-veined and long-matured cheeses.

Production area

The Villa Bossi estate, at an altitude of around 300 metres above sea level, in the dedicated Camerata and Sottomonte vineyards: 1.2 hectares of Trebbiano with a southern exposure, set on the hillside.
