The new oil at Fattoria Volmiano, 2013

As it does every year, on 4 November Fattoria di Volmiano will begin the olive harvest, so the “green gold” will go on sale from Thursday 7 November. Volmiano’s oil is a rarity, produced on this historic estate since 1427.

It is made in a cold-extraction mill with stone grindstones but with stainless steel machinery and a robot to stack the pressing mats, speeding up the process; the mats are changed once or twice as required.
