Di Gusto opening night

On Tuesday 26 January the opening evening of "Di Gusto" takes the stage, the new showcooking event format created in partnership between Lorenzo Vinci and PRESSO. During the event a series of chefs will showcase outstanding Italian products, cooking live in two designer kitchens. One of the showcooking sessions on the programme is sponsored by Marchesi Gondi – Tenuta Bossi, with the recipe: crêpes flambéed with Vin Santo, with biscuit ice cream and pears.
Guests will be able to taste the Marchesi Gondi wines, among them the Vin Santo del Chianti Rufina Riserva DOC Cardinal de Retz 2004 , the jewel of the estate, still made as tradition demands: 100% Trebbiano, with the grapes laid to dry for around 3 months on cane racks in a loft room.
Vinification takes place without skins after a gentle pressing. The wine ferments in small oak caratelli, where it then rests for 10 years.
You will recognise this nectar by its appearance: amber with intense tawny shades; Nose: great olfactory intensity, with remarkable complexity and breadth of aromas. Soft notes of walnut, almond, dried fig, caramel, candied fruit, dried white and yellow fruit, date and chestnut honey close on sweet spice and a lightly ethereal finish ; and finally the palate: sweet, supple and round, both elegant and powerful. The balance is intriguing: a structure carried entirely by an elegant alcoholic note finds freshness in support. The finish is extremely long, echoing all the notes found on the nose, dried fig above all.
