Olive harvest
Harvested by hand or with mechanical aids directly from the trees during October and November. The work is organised so as to damage neither the trees nor the olives.
Pressing and extraction
The oil is extracted within 4 hours of harvesting, thanks to a dedicated, state-of-the-art line on the estate capable of producing oils with a high polyphenol content. The cold extraction process, adapted to each specific batch of olives, can run the crusher at different speeds, with vertical malaxers able to work under slight vacuum. The oils are filtered through plant-based filters to remove any residual water.

Nose
The Volmiano IGP 2021 is our interpretation of the unique character of the 2021 harvest. Intense on the nose as on the palate, with elegant aromas of tomato and fresh olive, bitter notes of cardoon and chicory, and spiced notes of marjoram that close with a pleasant, clean peppery finish. The Gondi family chose to sacrifice the quantity that 22,000 trees would have allowed, in favour of a singular quality that makes every oil produced here unique and inimitable
Pairing
The Volmiano IGP is an ingredient of the very highest quality, and can therefore be paired with any recipe, its measure calibrated according to the contribution one wishes it to make.

Production area

Entirely within the olive groves of Fattoria di Volmiano, between 300 and 600 metres above sea level: 80 dedicated hectares on which 22,000 olive trees are cultivated following organic farming protocols.
